Made from a Northern Brewer Extract Kit.  Directly from Northern Brewer web site.

Its name means "dark wheat", and that's just what it is. An amber colored version of a German hefeweizen, with the same sour-phenolic character and light hopping of its paler cousins. Although it's a bit maltier than our Hefeweizen kit, it's still a mighty refreshing beer.

Comments

Fermentation took off in less than 12 hours.  Vigourous fermentation occurred between 12 and 24 that managed to clog my air lock in a 7 gallon bucket!

Procedure

Brought 1.5 gallons of water to a boil.  Removed from heat and added LME.  Returned to boil and added hops.  Boiled for 60 minutes.

Used ice bath to reduce temperature to around 80 degrees.  Added 3 gallons room temperature water to fermenting bucket.  Pour wort in and areated.  Topped to 5 gallons.

Pitched activated smack pack of yeast (24 hours) @ 72 degrees.
